This hand harvested Hawkes Bay fruit was open top fermented and then individually matured for 11 months in a mixture of French Barriques. This carefully assembled Cuvee of Cab.franc (69%) Merlot (17%) and Malbec (14%) exhibits blackberry, cassis and cedar aromas. The well-structured palate with its red currant and plum flavours is elevated by the fine silky tannins and a gentle earthiness. Match with red meats, hearty pasta dishes and mature hard cheeses.
